The plant and animal life of Vulcan (T'Khasi) is not nearly as diverse as that of many other Class M planets because of the severe environmental conditions on the planet. This does not mean the planet is a barren desert, despite that erroneous belief by many Alpha and Beta Quadrant species. Especially in the polar regions and around scattered sources of water, including several mid-latitude seas, life forms are quite plentiful. Only in the the vast deserts and volcanic regions is life relatively scarce, and even there life has found a way to adapt and survive.
Trees once existed across the planet, but now only a couple of small species survive near water. Much of the planet was once tundra, savannah or grassland, but most of these areas are now sandy deserts. The same thing happened on Earth, where the entire Sahara Desert region was once grassland. Most of the plants for eating are grown in massive hydroponic facilities located in or near most major cities of Vulcan. Today, many Vulcans eat synthesized food.
Several species that were once domesticated as pets or livestock are now extinct, mostly due to war and/or a virus of unknown origin that swept the planet long before Surak. Discontinuation of domesticating livestock happened after most Vulcans became vegetarians. Vulcans still inwardly mourn the loss of the Kaashk, Kenel and Ran-tu, because of the deep history of their association with their people.
A few examples of Vulcan animal life:
